Best Things About Summer Because This Season Rocks

Summer Paradise Best Things About Summer
Summer Paradise Best Things About Summer

Summer is like no other season of the year. After Memorial Day, that's it summertime rolls in.  It may be warm all year round where you live but summer is super special where I am and I bet where you are too because:

The best things about Summer are the ones that just make you feel good and remind me that it's really important to make some time to do more of what you love with those you love. Have fun. Stay motivated. Relax and enjoy life.

Really my most favorite reason summer rocks is that it stays light out later and later. I love that at 8 p.m. it is still light out, the sun is not as hot and it's the perfect time of day to take a walk, go shopping or just sit outside and have a cup of coffee.

The Beach and Boardwalk are just waiting for me to come on down. I don't get to go to the beach often but when I do the 40 minute trip is like being on vacation somewhere else in the world. The sky, the sand, the ocean as far as you can see. The boardwalk filled with rides and happy people. Sea gulls who are waiting for you to drop your funnel cake. Games and arcades, food and the amazing breeze coming off the ocean. Like paradise but not so far away.

Rain showers that end with the sun bursting through the clouds at just the right time bringing with it the most amazing rainbows . Where in the world do they really end and begin, for me rainbows are right on the side of my house and I run out to great them.

Pool time swimming and having some guilt free time off . We don't have our own pool like I did growing up but the ones in my development are big and heated. They provide lounge chairs, grassy areas for kids to play and we are close enough to walk there.

Ice cream, you scream we all scream for ice cream . We don't scream it but summer is perfect for ice cream breaks at one of the many local ice cream places near by. The biggest problem is picking which delicious home made flavor to choose from, cones or sundaes, sprinkles or nuts!

Summer means no school for kids and that means no homework or studying for tests. It still hopefully means reading and learning but no pressure, just enjoying.

BBQ Time that means BBQ parties big and small. Cooking outdoors and not heating up the house. What could be better than burgers, dogs and chicken from the BBQ!

Fresh produce at the local stands is one of the bonuses of living where I do. Bushels of zucchini and crates of strawberries and blueberries fresh from the stand. Corn on the cob picked that morning. Or wake up early before the noon sun and pick your own fresh fruits and vegetables.

Vacation time is definitely a family affair in the summer. Even short weekend trips away are fun and relaxing. Week long vacations while the kids are off from school and Mom and Dad take some time for work. Then when it's over and you are back at your house, there is no place like Home Sweet Home summery lazy busy crazy days.

Chocolate Strawberry Cookie SMores

Recipe Ingredient Ideas
Wilton Light Candy Cocoa Melts, 12-Ounce

Chocolate melts work great for this strawberry cookie recipe but if you don't have them, chocolate chips will melt fine

Chocolate Strawberry Cookies

Chocolate strawberries cookie smores are a treat for every occasion, easy and inexpensive to create and with a little DIY taste you can make them your way.

I made these up one day when I wanted a special sweet recipe I could make with my favorite chef assistants. I was thinking chocolate, they were thinking strawberries and cookies. So it was time to whip up some Chocolate strawberry cookies and as we went along, we tasted and made adjustments until it was everyones perfect recipe.

Cook Time

Prep Time: 15 Minutes

Total Time: About An Hour

Serves: Make A Lot Of Them!

Ingredients

  • Fresh Strawberries
  • Chocolate Melts or Chocolate Chips
  • Oreo Cookies - Double Stuffed Is My Favorite
  • Mini Marshmallows
  • Peanut Butter Chips
  • Sprinkles

Instructions

  1. Melt the chocolate - I use a super easy fondue pot
  2. Line the cupcake tray with your favorite cupcake liners
  3. Twist the Oreo cookie top off to reveal the double stuffing and cookie bottom
  4. Place 1 Oreo Cookie in each liner double stuff white goodness up (Save the tops of the cookies if you want to crush and crumble on the top of some of the Smores)
  5. Add a spoonful of melted chocolate on top of the oreo cookie
  6. Slice the strawberries in half the long way and lay it cut side down on top of the oreo cookie and melted chocolate
  7. Drop in some mini marshmallows
  8. Add some mini chocolate chips
  9. Go crazy and crush up some kit kats or add some sno caps or raisinets or chop up some nuts - it's all about what you love
  10. Add another spoonful or 2 of melted chocolate over the strawberry and in and around the candy toppings, this will not only taste great but hold everything together once it is chilled
  11. Decorate with sprinkles.
  12. Drizzle melted chocolate over the whole delicious thing
  13. Chill in the fridge for about 20 minutes
  14. Place it on a platter or serve it from the tray, surround it with family and friends and Enjoy!

  1. Bees - I hate bees mostly I hate the yellow jacket and wasp kind of bees that really seem to want to get me no matter what I am doing
  2. Weeds - The darn weeds grow everywhere. If you could win an award for thickest tallest weeds we would win but I've got them covered now - the natural way
  3. Ants and Mosquitos and the damn beetles are everywhere. I swear these bugs are all playing some insect game where whoever makes it into my house wins. Not cool. I hate mosquito bites and I spend April to October keeping ants as far away from my house and yard as possible. Not an easy task, there is never one ant. Ever. These guys really bug me.
  4. Sunburn - Sunburns are not cool. They hurt. They damage your skin and sun block to my face, neck and everywhere on my body is a definite summer requirement.
  5. Wet Towels - Yes, wet towels absolutely everywhere. We all use about two towels each, you know one to sit on even on lounge chairs, then one to dry off with and wrap around your shoulders. Lots of wet towels.
  6. Shorts and bathing suits - ready or not the heat is here and you may feel self conscious or underdressed, but you just have to go with it.
  7. Heat - remember all winter when you complained it was too cold - well now it's just too hot!
  8. Thunder and lightning storms can get seriously scary, especially when they pop up flooding streets and roadways, knocking out the power (no cable!), bringing down trees and even starting structure fires.
  9. Electric bills are sky high because, well the air conditioner has to be running because, it's so hot out. Remember Winter when we said it was too cold, yeah.
  10. Muggy, humid uncomfortable weather that makes hair frizz and people grumpy, yeah that's a lot of fun. Not.
