Chocolate strawberry cookie smores recipe sounds like a mouthful and it is, not only to say but it is one delicious mouthful of taste all wrapped up in a cupcake liner. Imagine Oreo Cookies on the bottom, strawberries dipped in chocolate, your favorite toppings like chocolate chips, mini marshmallows, peanut butter chips, cookie crumbles, sprinkles, you name it and you can add it.A few very easy ingredients created DIY with a little creativity, a lot of love and some hungry baking assistants topped off with drizzled chocolate and you have a sweet treat perfect for holidays, birthdays, special occasions, or just because you love them.Just like all of my recipes, they have very few ingredients, no complicated instructions and can be modified to make your taste buds happy!

Chocolate strawberries cookie smores are a treat for every occasion, easy and inexpensive to create and with a little DIY taste you can make them your way.I made these up one day when I wanted a special sweet recipe I could make with my favorite chef assistants. I was thinking chocolate, they were thinking strawberries and cookies. So it was time to whip up some Chocolate strawberry cookies and as we went along, we tasted and made adjustments until it was everyones perfect recipe.

Chocolate melts work great for this strawberry cookie recipe but if you don't have them, chocolate chips will melt fine

Chocolate Strawberry Cookies

Chocolate strawberries cookie smores are a treat for every occasion, easy and inexpensive to create and with a little DIY taste you can make them your way.

So it was time to whip up some Chocolate strawberry cookies and as we went along, we tasted and made adjustments until it was everyones perfect recipe.

Prep Time: 15 Minutes

Total Time: About An Hour

Serves: Make A Lot Of Them!

Ingredients

  • Fresh Strawberries
  • Chocolate Melts or Chocolate Chips
  • Oreo Cookies - Double Stuffed Is My Favorite
  • Mini Marshmallows
  • Peanut Butter Chips
  • Sprinkles

Instructions

  1. Melt the chocolate - I use a super easy fondue pot
  2. Line the cupcake tray with your favorite cupcake liners
  3. Twist the Oreo cookie top off to reveal the double stuffing and cookie bottom
  4. Place 1 Oreo Cookie in each liner double stuff white goodness up (Save the tops of the cookies if you want to crush and crumble on the top of some of the Smores)
  5. Add a spoonful of melted chocolate on top of the oreo cookie
  6. Slice the strawberries in half the long way and lay it cut side down on top of the oreo cookie and melted chocolate
  7. Drop in some mini marshmallows
  8. Add some mini chocolate chips
  9. Go crazy and crush up some kit kats or add some sno caps or raisinets or chop up some nuts - it's all about what you love
  10. Add another spoonful or 2 of melted chocolate over the strawberry and in and around the candy toppings, this will not only taste great but hold everything together once it is chilled
  11. Decorate with sprinkles.
  12. Drizzle melted chocolate over the whole delicious thing
  13. Chill in the fridge for about 20 minutes
  14. Place it on a platter or serve it from the tray, surround it with family and friends and Enjoy!

Wilton Light Candy Cocoa Melts  work great for this strawberry cookie recipe but if you don't have them, chocolate chips will melt fine, you can even melt the chocolate in the microwave in a microwave safe bowl 30 secs at a time with frequent stirring so they don't burn!

I love serving even the most basic cooking or baking recipes on platters, serving bowls or even plastic trays covered in cute doilies. Appearance is part of the fun and has everyone's mouth watering before they even get their first taste.

  1. Bees - I hate bees mostly I hate the yellow jacket and wasp kind of bees that really seem to want to get me no matter what I am doing
  2. Weeds - The darn weeds grow everywhere. If you could win an award for thickest tallest weeds we would win but I've got them covered now - the natural way
  3. Ants and Mosquitos and the damn beetles are everywhere. I swear these bugs are all playing some insect game where whoever makes it into my house wins. Not cool. I hate mosquito bites and I spend April to October keeping ants as far away from my house and yard as possible. Not an easy task, there is never one ant. Ever. These guys really bug me.
  4. Sunburn - Sunburns are not cool. They hurt. They damage your skin and sun block to my face, neck and everywhere on my body is a definite summer requirement.
  5. Wet Towels - Yes, wet towels absolutely everywhere. We all use about two towels each, you know one to sit on even on lounge chairs, then one to dry off with and wrap around your shoulders. Lots of wet towels.
  6. Shorts and bathing suits - ready or not the heat is here and you may feel self conscious or underdressed, but you just have to go with it.
  7. Heat - remember all winter when you complained it was too cold - well now it's just too hot!
  8. Thunder and lightning storms can get seriously scary, especially when they pop up flooding streets and roadways, knocking out the power (no cable!), bringing down trees and even starting structure fires. 
  9. Electric bills are sky high because, well the air conditioner has to be running because, it's so hot out. Remember Winter when we said it was too cold, yeah.
  10. Muggy, humid uncomfortable weather that makes hair frizz and people grumpy, yeah that's a lot of fun. Not.

The best things about Summer are the ones that just make you feel good and remind me that it's really important to make some time to do more of what you love with those you love. Have fun. Stay motivated. Relax and enjoy life.
